Description
Arisha is located in Yirgachev in Gedeo, often referred to as Kybele. Known for its cool climate and picturesque landscape, its crops are widely appreciated for their vibrant flavours and diverse flavours.
This crop is processed using the anaerobic drying method; the coffee is harvested by hand, sorted to include only the red cherries, and then packed tightly in large plastic drums that completely block out oxygen.
After about 60 hours the barrels are emptied of the coffee and placed on raised beds with the cherries intact to dry slowly over two or three weeks.
This controlled brewing process, if done correctly, can dramatically improve the quality of your coffee!
