In 2006, João Hamilton dos Santos from Sitio Canaã began a collaboration with Marcos Croce of Fazenda Ambiental Fortaleza (FAF), laying the groundwork for one of our longest-standing partnerships focused on sustainable coffee production.
This Java varietal, cultivated at Sitio Canaã, offers a vibrant cup profile with notes of guava, passionfruit, and milk chocolate, rounded out by a delicate floral intensity.
Tracing its origins to Ethiopia, this particular strain of Java varietal traveled to Southeast Asia before being reintroduced to Brazil in 2014. FAF brought seeds from Nicaragua’s Selva Negra farm, a direct descendant of the original Typica planted in Java centuries ago.
