This Catuai espresso is the result of close collaboration with João Hamilton and Fazenda Ambiental Fortaleza (FAF). Together, we isolated day lots scoring 87 points or higher, showcasing the exceptional potential of coffees from Sítio Canaã. This meticulous selection process highlights a clean, vibrant profile that speaks to João’s precision and commitment to quality.
Sítio Canaã, located in Brazil’s Mogiana region, benefits from clay-rich, mineral-dense soils that provide an excellent foundation for coffee cultivation. João’s regenerative farming practices, including intercropping and a high shade tree density, foster biodiversity and enhance soil health. These techniques also play a critical role in adapting to the region’s increasing environmental challenges, including severe droughts.
During our recent visit, we witnessed João and the FAF team’s innovative approach to sustainability, including efficient water use and organic soil management strategies. This lot underwent natural processing, with carefully controlled drying on patios to preserve clarity and complexity in the cup.
In the cup, expect vibrant notes of red apple, red grape, and fruit punch, complemented by a creamy, structured body. This coffee represents the culmination of thoughtful farming and precise processing, making it a standout espresso for those who value exceptional quality and sustainability.
